These carrot cake donuts have the flavor of your favorite carrot cake with cream cheese icing, but in donut form. Baked instead of fried, you will love how easy they are to prepare!
I love carrot cake. The spices … the dense, super-moist cake crumbs …. the cream cheese frosting. It's probably one of the tastiest cakes you can make. And though I've been skeptical of desserts with vegetables for much of my childhood, I'm now a big carrot cake creditor. (Cue the Journey)
So it was clear it was time to prepare donuts with carrot cake. Because that's exactly what I do with all my favorite cakes.
Today's carrot cake donuts have the flavor of your favorite carrot cake recipe. They are baked instead of fried, baked with cream cheese glaze and made without an electric mixer. The whole recipe is much faster than a carrot cake – and if you're like me, you can always make a donut for breakfast.
Well, it's easy to prepare our baked carrot donuts. First, our dry ingredients (flour, spices and baking powder) are whisked. Then oil, sugar, egg, vanilla and sour cream are mixed together. Finally, we mix our dry ingredients in the oil mixture and stir in the minced carrots.
Then it's time to bake. For today's recipe we use a donut pan. It's seriously the easiest way to prepare donuts, and there's no frying. You can buy a donut pan for under $ 10. However, if you do not have them, you can bake them in a muffin pan instead.
After the donuts are ready, it's time for the cream cheese icing (probably my favorite part). It's spicy, creamy and the perfect complement to this delicious carrot cake flavor. I decorated my carrot cake donuts with chopped pecans, but walnuts would work as well.
I love that these baked carrot donuts have the delicacies of your favorite carrot cake recipe, but take much less time AND I can eat them for breakfast. They have the perfect pie donut texture and seriously, if you have never made baked donuts, you must try them out.
