Delicious and healthy Crockpot Vegetarian Paprika

Looking for a healthy and soothing dish that's perfect for those chilly months ?! This crockpot vegetarian chili recipe is super easy and also suitable for the pickiest eaters. A great combination of beans, vegetables and lentils makes for a delicious chili. I promise you that you will not miss the meat!

Honestly, I think chili is my absolute favorite in good weather. I make different versions of chili (because I'm obsessed, let's be real) and this Crockpot Vegetarian Chili is my personal favorite. This vegetable and chili recipe is packed with fresh vegetables, beans, lentils and, of course, a range of spices to create a kind of smoke with a hint of spicy flavor. This chili is perfect to just forget it in the morning and come home to eat and finish in a deliciously scented house. If slow stoves are not your jam, I've also included instructions for Stove and Instant Pot for this healthy chili! What's needed to prepare Crockpot Vegetarian Chili

The kitchen utensils you'll need for this vegetarian crockpot chili recipe include:

  • A crockpot For this vegetarian chili recipe I use LOVE my slow cooker. If you do not have a suitable crockpot, you can prepare this healthy chili on the stove or in a pressure cooker. All options give super delicious chili, little promise!
  • A hand blender or blender To make this recipe look more like chilli and not turn into soup, you need to mix some of the finished chili. I like to use my hand blender so I can keep all the chiles in the slow cooker. Alternatively, you can use a blender to scoop up some chili and then put it back in the pot.
  • A can opener
  • Measuring cup and spoon

The ingredients you need for this vegetarian slow cooker chili are:

  • Dosenbohnen- I used a combination of pinto, kidney and black beans for my slow cooker veggie chili. You can use this combination or use any beans. You can also use dried beans, but make sure you soak and prepare them before you put them in the pot.
  • Lenses- I have used red lentils, you can use brown or green if you prefer.
  • Canned tomatoes I have used roasted fire in my chili and I think the spice gives this vegetarian chili a great taste. If you are not a spice fan, simple, chopped tomatoes will work.
  • Tomato sauce
  • Fresh vegetables I like the combination of carrots, mushrooms, onions and red pepper I used for this crockpot chili. Here are some additional vegetarian options if one of them is not your preference.
  • spices- I know, I know there are many spices for this vegetarian chili recipe. But I really think they are all necessary to make this Veggie Chili Superbomb.
  • Gemüsebrühe- Instead of vegetable broth you can also use water.

How to Make Slow Cooker Vegetarian Chili

I love to cook this vegetable chili in my pot. It's so easy to set and forget, and this cooking method requires the least amount of steps. Of course, if you do not have a slow cooker or the time is short, I have included instructions for cooking the hob and instant pot. The Crockpot option is also great for tailgates, parties or potlucks! All methods make delicious vegetarian chili, and it really is so if you only have access to and your personal preferences.

  • Coarsely chop fresh vegetables (I suggest using carrots, mushrooms, onions and a red pepper) and measure all ingredients.
  • Put everything in the slow cooker, cover and cook for 6 hours at LOW or 4 hours ON HIGH.
  • When your chili is ready cooked, use either a hand blender or a blender to mix the chilli. This step is very important and helps this vegetable chili to preserve this classic chili texture without the meat. If you skip this step, the chili is more like a soup. If using a blender, remove 1-2 cups of chili (make sure you get some liquid) and pulse until only small pieces are left. Put this back in the pot and stir to combine. If you are using a hand blender, simply put it in the pot and stir until your vegetarian chili is slightly mixed and thickened to your liking.
  • Serve warm with recommended toppers or leftovers in the refrigerator.
  • Instructions for vegetarian chili from the stove

  • Chop fresh vegetables and measure all ingredients.
  • Put the carrots, peppers, mushrooms and onions in a large saucepan and sauté with a little oil until the vegetables are tender (about 4 minutes).
  • Add fresh garlic and cook for another 1-2 minutes until it smells.
  • Put the remaining ingredients in the large pot, stir and bring the chili to a boil. After cooking, reduce heat, cover and simmer for at least 30 minutes (longer will develop a deeper aroma) or until the lentils are cooked.
  • When your chili is ready cooked, use either a hand blender or a blender to mix the chilli. If using a blender, remove 1-2 cups of chili (make sure you get some liquid) and pulse until only small pieces are left. Add this back into the big pot and stir to combine. If you are using a hand blender, simply put the blender in the pot and stir until your veggie chili is lightly mixed and thickened to your liking.
  • Serve warm with Topper of choice or keep leftovers in the refrigerator.
  • Instant Pot Vegetarian Chili Instructions

  • Chop vegetables and measure all ingredients.
  • Put carrots, peppers, mushrooms and onions in a large instant pot and turn on SAUTE. Boil fresh vegetables with a little oil until soft, about 4 minutes.
  • Add fresh garlic and cook for another 1-2 minutes until it smells.
  • Pour the remaining ingredients OUT OF THE BEANS into the instant pot and stir until the bottom of the pot is reached.
  • Cover and seal the instant pot and cook for 8 minutes on HIGH / MANUAL.
  • After the time has elapsed, immediately release the pressure (quick release) and carefully open the instant pot.
  • Turn off the Instant Pot, add the beans and stir.
  • Replace the lid and let it work for 5-10 minutes.
  • Once your chili has risen, use either a hand blender or blender to mix the chilli. If using a blender, remove 1-2 cups of chili (make sure you get some liquid) and pulse until only small pieces are left. Add this back into the instant pot and stir to combine. If you are using a hand blender, simply put the blender in the instant pot and stir until your vegetable chili is lightly mixed and thickened to your liking.
  • Customize the spices to your liking and serve them warm with toppers of your choice.

    Healthy Vegetarian Chili Recipe Ingredient Substitutions

    Chili is one of those dishes because everyone has their own preferences and someone in the family swears that his chili recipe is king (I'm that person). That's why I've added a few ideas on how to prepare this vegetarian chilli crockpot recipe to your own liking. Of course, if you want exactly how I do it for my family, then just follow the recipe. But if you want to become that crazy chili person in your family, here are some great ideas to mix this vegetarian chili recipe and give it your own touch. Please note that changes to the recipe change the overall taste. I am not responsible for your chili tasting funky.

    Meat options

    That's why I'm proud to make vegetarian recipes that even love meat eaters. This slow cooker chili is one of them. My husband is a carnivore and still loves this chili. But I understand, if you just have to add some meat. Some good options are chicken breast or turkey for a lighter option. Alternatively, you can also use the more traditional minced meat or pork sausage. If you want to add meat that I want to cook in the pan first, put it in the pot and cook with the remaining ingredients. With the exception of chicken breast, you can add it raw and chop it after boiling. Also, you do not have to mix the chili at the end when you go the meat route and you can add fewer vegetables.

    Vegetarian options

    For this crockpot vegetarian chili I like to use a combination of fresh carrots, mushrooms, onions and red pepper. I think these vegetables give this chili a great taste and great texture without your facial vegetable taste tasting particularly good. Of course you can use this combination or add or subtract what you want. Some other great vegetables in this chili recipe are corn, sweet potato, zucchini, pumpkin, another color pepper, jalapeno peppers for some spice or eggplant.

    Chili serving suggestions

    What is chili without some great toppers that you can combine with it? Here are just a few of my favorite supplements that I would like to combine with this Crockpot Vegetarian Chili. Of course these are just a few suggestions and you can add anything you want! I've included both vegetarian and vegan options so everyone will find something to enjoy.

    Vegan serving options

    • Tortilla chips
    • Fresh coriander
    • Sliced ​​avocado
    • Vegetable cheese
    • Oyster crackers

    Vegetarian serving options

    • Simple fat free Greek yogurt
    • Shredded Cheese (Pepper Jack is a bomb with this Slow Cooker chili)

    Instructions for storage of chilli and freezer

    Keeping this vegetarian chilli rest is a breeze. Simply place the residue in an airtight container and refrigerate for up to 4 days. To warm chile residues, place in a microwave-safe bowl and heat for 2 minutes or until heated. This healthy vegetarian chili is super delicious and is great for preparing meals or a night out with the family.

    Also this slow cooker chilli can be frozen! To freeze cooked vegetarian chili, place it in a storage bag, seal it, remove the air, and allow to cool completely. Store in the freezer for up to 3 months. I like to double my chili. When you are ready to reheat the vegetarian chili, you have some options. You can put the vegetable chilli back into the crockpot, which is frozen (or thawed) until it is thoroughly warmed up. Alternatively, heat the thawed chili in a large saucepan on the stove or in the microwave.

    Alternatively, you can prepare the chili and put all raw ingredients in a large bag and freeze for up to 3 months. Thaw frozen chili overnight in the refrigerator and follow the cooking instructions of the recipe or place in the frozen pot and add 1-2 hours to the total cooking time.
