To simplify this recipe for baked chicken tenderloins, I have made some better-for-you-ingredient swap agents that do not sacrifice delicious chicken delicacies! Of course, I have decided to prefer the Mazola corn oil over the more traditional olive oil. After learning more about the potential health benefits of Mazola corn oil, sharing it was child's play. Next, I decided to substitute mayonnaise for low-fat Greek yogurt. This trade is a healthier option that gives this recipe an extra protein boost. In addition, Greek yoghurt is delicious, so it does exist. The last ingredient I've exchanged for this recipe for baked chicken buns is pistachios instead of breadcrumbs. Breadcrumbs are traditionally used whenever breaded chicken tenders are involved. I mean, it's even in the name! Prepare baked chicken tenders

Preparing pistachio crusted chicken offers

  • Combine non-fat Greek yogurt, Mazola corn oil, lemon juice and spices in a medium-sized shallow bowl and stir to combine. For now put aside. We will come back to it soon.
  • In a food processor or blender, add the pistachios (no skins) and pulse at low medium speed until fine and few to no pieces left. Personally, I like a few pieces because it gives the baked chicken feeders a nice crispiness. You can do the same or pulsate until the pistachios are like breadcrumbs. In both cases, place the crushed pistachios in a second bowl of grated Parmesan cheese and set aside.
  • Take your chicken fillets one at a time and spread them in the Greek yogurt mix. Let the surplus fall off. Then cover the chicken fillet with the crushed pistachio mixture.
  • Place the pistachio-minced chicken fillet on a greased baking tray (with metal rack insert, if present). Repeat steps 3 and 4 until all chicken tenders are covered.

    This recipe for baked chicken fillets is simple and the leftovers can be stored in the fridge. This makes this simple recipe for chicken tenderloin a wonderful option for preparing meals and for lunch during the week. Keep leftovers of baked chicken in an airtight container in the refrigerator for up to 4 days. To warm up the baked chicken fillet, place on a microwaveable plate and heat for 30-60 seconds until warm.
