Pizza-Pasta Salad

During the summer months we prepare so many different salads that we can enjoy them while having a barbecue. I can prepare large quantities of salads to enjoy lunch and dinner for a few days. I usually make our traditional pasta salad with balsamic vinaigrette. Most of my kids enjoy it.

Pizza Pasta Salad has the delicious ingredients of a pizza right in a pasta salad. You'll find it's the perfect accompaniment to your summer picnics, barbeques, and potlucks.

Occasionally we go out of the box and try different types of salad recipes. I've seen other bloggers doing something like Pizza Pasta Salad. They all did not seem to have what I would think was the perfect blend of flavors in a pizza. I knew my homemade tomato vinaigrette dressing would make a great pasta salad coating.

The dressing worked perfectly. I'm sure this pasta salad would be great with a simple balsamic dressing, but adding the tomato flavor in the homemade dressing has made the salad more pizza-inspired, if you ask me.

To prepare a large bowl of our pizza pasta salad, you need your favorite noodles. Any pasta would work, but I used Rotini pasta. You will also need red onions, red peppers, green peppers, black olives, mini hot peppers (or halved hot peppers), grated Parmesan cheese and fresh mozzarella cheese. To refine it, add my homemade tomato vinaigrette dressing. I also put some banana peppers on my plate just because I like banana peppers on my pizza. Feel free to add one of your favorite pizza toppings to this salad.

INGREDIENTS
1 pound box of Rotini (or your favorite noodles), boiled and drained
1 large bell pepper, chopped
1 large red pepper, chopped
1/2 large red onion, chopped
10 ounces of grape tomatoes, cut in half
3.8 oz. Sliced black olives, drained
5 ounces of mini pepperoni
1/2 cup grated Parmesan
8 ounces mozzarella, chopped
1 cup of homemade tomato vinaigrette or your favorite vinaigrette dressing

DIRECTIONS
Mix all ingredients in a large bowl and coat.
