Ingredients :

  • 1/2 spaghetti squash (about 2 cups)
  • 1 cup chopped roast chicken
  • 1 onion sliced
  • 4 eggs
  • 1/3 cup pad Thai sauce
  • 1/3 cup cashew nuts chopped
  • 1/4 cup spring onion chopped


  • Preheat oven to 375 ° F. Halve spaghetti squash lengthwise and remove seeds. Place face down on a silicone baking mat and bake for 45 minutes.
  • Once the spaghetti squash is cool enough, you can take it out of the shell with a fork.
  • In a medium sized pan a brown onion. (Use a cooking oil of your choice, we love coconut oil). Once the onion slices are caramelized, add 4 eggs to the pan and mix. Remove the eggs and onions from the pan and set aside.
  • To the same pan in which you have cooked eggs and onions, add chopped chicken and stir to heat. This allows the chicken to also absorb some of the juices remaining in the pan.
  • Add spaghetti squash, pad thai sauce, eggs, onions and litter to coat evenly. Remove from heat and garnish with spring onions and chopped cashew nuts.
