When the strawberry season is around, I'm always looking for more ways to integrate strawberries into the kitchen – and into my stomach. Instead of making buttermilk pancakes for brunch last weekend, I decided to put the berries in the pancake batter instead. This results in these delicious strawberry-filled pancakes.
The recipe itself is super easy.
With the combination of milk and vinegar, we actually make our own buttermilk substitute. Buttermilk is great for pancakes because it makes the pancakes particularly tender and fluffy and gives the taste a delicious touch of seaweed. However, since I realize that most people do not always have it in the kitchen, I have decided to use this replacement product instead. If you have buttermilk on hand, you can also omit the vinegar and use instead of normal milk.
Now a few pancake tips.
- Feel free to use fresh or frozen berries in this recipe. If you use frozen, you do not need to thaw the berries. Toss them into 2 teaspoons of flour before folding them into the dough.
- When preparing pancakes, make sure that milk and eggs are at room temperature before you start. You can heat the milk in the microwave in short ten-second increments. Put the eggs in a bowl of warm water for 5 minutes to bring them to room temperature
- Carefully fold in the moist and dry ingredients. To have lumps in the dough is perfectly fine.
- To keep the pancakes warm while preparing the entire batch, preheat the oven to 200 ° F and place a griddle on a baking sheet. After making the first pancakes, place them on the baking tray and put them in the oven to keep them warm.
